
Hummus is one of my favourite things. It’s a great source of protein, and the perfect snack to have with some sliced veg. People often think it’s a faff to make but it’s so easy – and can be pimped up with lots of extra goodies for a nutritious boost. Here is my basic hummus recipe, with some ideas for added extras…
Ingredients (serves 3):
- 1x 400g tin chickpeas, drained and rinsed
- 3 tablespoons tahini
- Juice and zest of 1 lemon
- 1/2 teaspoon salt
- 1 clove garlic
- 1 tablespoon water
Ideas for extra goodness:
- Red peppers (raw or cooked)
- Beetroot (raw or cooked)
- Carrots (raw or cooked)
- Tinned edamame beans
- Rocket
- Parsley
- Avocado
- Sun dried tomatoes
- Anchovies
+ herbs and spices…
- Smoked paprika
- Ground cumin
- Coriander
- Dill
- Basil
- Harissa paste
- Chilli powder
- Curry powder
Method:
Put all the ingredients in a food processor and whizz till smooth. If the mixture is too thick, add a splash more water and blend again.
