Build your own hummus

Hummus is one of my favourite things. It’s a great source of protein, and the perfect snack to have with some sliced veg. People often think it’s a faff to make but it’s so easy – and can be pimped up with lots of extra goodies for a nutritious boost. Here is my basic hummus recipe, with some ideas for added extras…

Ingredients (serves 3): 

  • 1x 400g tin chickpeas, drained and rinsed  
  • 3 tablespoons tahini 
  • Juice and zest of 1 lemon 
  • 1/2 teaspoon salt
  • 1 clove garlic 
  • 1 tablespoon water 

Ideas for extra goodness:

  • Red peppers (raw or cooked)
  • Beetroot (raw or cooked)
  • Carrots (raw or cooked)
  • Tinned edamame beans 
  • Rocket 
  • Parsley 
  • Avocado 
  • Sun dried tomatoes
  • Anchovies

+ herbs and spices…

  • Smoked paprika 
  • Ground cumin
  • Coriander 
  • Dill
  • Basil
  • Harissa paste
  • Chilli powder 
  • Curry powder 

Method:

Put all the ingredients in a food processor and whizz till smooth. If the mixture is too thick, add a splash more water and blend again.
