An easy, filling and nutritious breakfast or snack. Takes just 5 minutes to make and can be jazzed up with whatever fruit or toppings you fancy!
Ingredients (serves 1):
- 2 tbsp chia seeds
- 125ml milk of your choice
- 2 tsp maple syrup or honey
- Fruit of your choice (dark-skinned berries are a great low GL fruit)
Method:
Mix the chia seeds, milk and maple syrup in a jar or bowl. Cover and place in the fridge overnight or for at least 8 hours.
When ready to eat, just add the fruit and a drizzle of maple syrup / honey, if needed.
Tip: Use leftover smoothie in place of milk – just pour over chia seeds, stir and leave overnight in a covered bowl.
