Mango ‘nice’ cream

A lovely little pudding that will transport you to more tropical lands. Frozen mango is a great one to have in the freezer (it’s available at most supermarkets), so you can knock this one up in a couple of minutes.

Ingredients (serves 1-2): 

  • 1 cup frozen mango 
  • 2 tablespoons coconut milk (from tin)
  • 1 tablespoon desiccated coconut 

Method:

Stick all the ingredients in a food processor and blend till smooth. Enjoy straight away before it melts!
