Nutty granola

A delicious, easy, grain-free granola. Trust me, it’s good. Enjoy with Greek yogurt and fruit for a scrummy, satisfying breakfast. Just try to resist eating it out of the jar…

Ingredients: 

  • 200g roughly chopped mixed, unsalted nuts (e.g. almonds, brazils, cashews, pistachios, hazelnuts, walnuts)
  • 1 tablespoon coconut oil 
  • 1 tablespoon honey or maple syrup 
  • 1/2 teaspoon vanilla paste 
  • 1 teaspoon cinnamon 
  • Zest of 1 orange 
  • Pinch of sea salt 

Method:

Preheat the oven to 170°C / 150°C fan.

Place all the ingredients in a large bowl and mix well. Tip onto a large baking tray, lined with baking parchment. Bake for 20 minutes, stirring halfway.

Leave to cool completely and then store in an airtight container for up to 10 days.
