Tahini dressing

I love this dressing and have it on pretty much everything – salads, roasted veggies, grains, or stirred into soups. A great one to have in the fridge to jazz up your meals. 

Ingredients: 

  • 1 tablespoon tahini 
  • Juice and zest of 1 lemon 
  • 1 garlic clove, grated 
  • 1 tablespoon sweet white miso 
  • Dash of water 
  • Good pinch / shake of salt & pepper

Method:

Put all the ingredients in a food processor and whizz till smooth. If you don’t have a food processor, you can mix in a bowl or jar with a fork. If the mixture starts to separate and split, just keep stirring vigorously until it goes smooth again! You may need to add more water if the consistency is too thick.
